What’s for dinner?

I really like pizza.  It’s kind of the perfect food. Depending what you have on it and serve with it, you can hit 4 or 5 food groups without much effort and a lot of enjoyment. Most weekends we have pizza.  Most Monday’s I have leftover pizza for lunch.  Well, I do if I haven’t already eaten the leftovers.  I really like leftover pizza, too. I can’t wait to go to Italy and taste it there. Taste, what am I saying?  I mean EAT, ENJOY, SAVOR the pizza in Italy.  Anyway,  come about 4pm on Monday afternoon I am looking through the fridge and freezer to decide what’s for dinner.

Last week,  after the super bowl, I cooked up some fried rice with the leftover smoked pork. It was great so I thought I would share a quick recipe.  For those of you who don’t cook much, remember mix and match the veggies that you like.  If you love Brussels sprouts and and have some in your fridge, add them.  Well, for the record, there are no Brussels sprouts in my fridge.  Me and Honey don’t much care for them.  As a matter of fact, the first ever Thanksgiving meal we served, my Gramps showed up with a large green stock with green balls stuck on it.  It was dirty from his garden.  Gramps might have been the original organic guy, way before his time, eating seeds and nuts and juicing and growing his own produce.  His idea of sharing a treat with his grandkids was rice cakes.  And apparently Brussels sprouts.

I think he brought the sprouts to serve with dinner.  I found the stock, balls and all, in the kitchen garbage about 10 minutes later.  Honey thought Gramps was just cleaning out his car.  Oops. I shoved them in the back of the fridge. We didn’t serve them.  I had no idea how to cook them as I had never seen them before.

Here is a recipe from Jamie Oliver to get you started on a basic rice recipe.  I always have spinach in my fridge so most recipes I add a cup, chopped, at the end.    Sometimes I use fresh garlic and ginger as Jamie suggests.  Sometimes instead I just add a tablespoon or two of Chinese 5 spice.  I used to use the fried rice seasoning packet from the grocery store and follow the packet directions exactly. I’ve come a long way.

Super Bowl this year just didn’t hold the same interest for me. With the Seahawks out of the running our gathering became more about the party than the bowl game. As usual I served a half time meal and let everyone know we were having pulled pork sliders, coleslaw and salad. We got a little help from Costco with the pork. I could have gotten out R2D2, our smoker and smoked our own, but why?

Well, here’s the why. I bought the thing, the smoker, after attending a fabulous smoked meats party where the host had 3 smokers going with ribs, chicken and sausage. Bob made it look so easy and even told me where and which one to buy. That next weekend Honey and I headed to our local butcher and bought ribs and sausage, the good stuff. We spent the afternoon with it all piled in the smoker, even threw in a hunk of cheese, and let it smoke away. Well the cheese melted; of course it did, and caught on fire. Apparently you’re supposed to use cheesecloth. The sausage was so burned it just had a black outside casing and nothing left in the middle. Mr. Smoker said too hot for too long. Oops. The ribs were a disaster too. It’s kind starting to the sound like the fish stew isn’t it? (Read about that kitchen fail here.) Only there was nothing to salvage.

That’s why getting a little help from our local warehouse store sounded way easier than trying another round with R2D2. And, I am all about the simple when it comes to being a hostess. I can make coleslaw and Honey happily agreed to mix up a couple of vinegar based sauces. My girlfriend offered to bring the green salad. For anyone that asked, I told, ‘bring something to share.‘ I probably should have started an email chain so everyone could chime in with what they were bringing.

We ended up with 8 bags of tortilla chips for 15 people. Good thing honey likes chips and salsa because we have leftovers. The veggie tray we assembled mostly went untouched. And that pork, it smelled so good warming up on the stove as everyone arrived. A few asked if I cooked it ahead of time in a slow cooker. (What’s with that anyway? We always call them crockpots.) I confessed immediately I was strictly the warmer, not the pit master: me and my favorite Le Cresuet pot. And, it made great fried rice the next day. I will share the recipe in another post.

Here’s the lesson. Make it simple and they will come. Or, maybe you will just be willing to host.

When my mom passed away suddenly, my brothers and I were left to make decisions about what do with all of her stuff. My mom seemed to have a lot of things saved for ‘just in case’. Just in case she ever needed a small cardboard jewelry box lined with cotton batting, she had 3 dozen ready and waiting, tucked in a large plastic bin in the back of her closet. She had saved a ball of rubber bands so big we probably could have strung them all through her neighborhood. In her pantry were 3 unopened boxes of aluminum foil. The odd thing about that was she microwaved all of her leftovers and probably hardly ever used foil. Under the sink, cleaning products were stock piled. There was more food frozen in her freezer than any single person could eat in a year. The dates on the packages proved it.

That was a weird week. It felt voyeuristic to be sorting through her life, discovering treasures, throwing away possessions, dumping containers of juice and cottage cheese down the sink. Stacked up in the corner of her guest room were a couple hundred picture frames filled with the faces of us. She had saved them  all. Of course since we had given them to her, our milestones, no one wanted or needed another copy. They were all there; baby, school, graduation and weddings.

Its been over 3 years and hardly does a day go by that I don’t open up a drawer, closet or cupboard and think, “if my daughter had to clean this out today what would she find, what would she have to throw away, give away, discard?” Even though I make several trips a year to the goodwill, I still find myself holding on to things for the ‘just in case’. Stock piling and keeping items that I just might need for some future unknown. I still have a box of her letters I can’t quite seem to put in the recycle. They mean little to me, other than that they meant something to her.

One of the first things I came across that rainy fall week were over a dozen plastic shower caps. You know, the disposable kind brought home from a hotel? Here’s the thing: they were in MY bathroom drawer. Yep, rarely do I jump in the shower and not wash my hair, but there they were. That day I glanced over at the shower and there was a used one hanging over frame. That day I started cleaning out my stuff, little by little. That day I decided to quit bringing home more shower caps.

It’s hard to change old habits. Earlier this year I cleaned out my sock drawer. I donated nearly 20 pairs and still have more than I need in any 2-week timeframe. I’ve tried to adopt the philosophy of clean it out instead of organize it. I really don’t need a milk crate sized bin full of spare shower caps tucked in the back of my closet. I know for sure my daughter doesn’t want them.

I’m trying to use up the items in the pantry and fridge BEFORE I buy more food. I’m trying to get rid of a pair of jeans if I buy a new pair. I’m trying to surround myself with things that bring me joy instead of hanging onto items that don’t.

Then there’s the salad dressing. I never understood a snarky comment my mom had made about all of the salad dressings in my refrigerator being crap. It was an insult she flung at me as she left my house one night. I didn’t know what she was talking about. It was probably something leftover from a potluck. But as we emptied her fridge, bottle after bottle of the ‘good stuff’ was lined up on the counter.

PS-turns out I have at least a 3 year supply of shower caps. And, now what do I do with all the matchbooks now that no one smokes?

Stockings hung by the fire

The stockings are hung and all through the house not a creature is stirring, not even a mouse. Well that’s not true. We have been busy shopping, wrapping, menu planning and filling the fridge with food. Come Christmas morning we will wake up to a house full of kids, nieces, nephews, aunts, uncles and participate in stocking gifts, prizes and treats.  Some years a paper grocery bag has serves the purpose if we have guest in need of a stocking. (That reminds me: I better ask for paper my next grocery trip instead of bringing my own bags or we will end up with no back up plan!)  It is always a fun, goofy time with many little traditions.  There is always a can a Pringles in my stocking.  Not sure how that started, but I do love those salty, pressed snacks. By mid-morning the can has been passed around and comes back empty.  Apparently others love ’em as much as me.

One stocking stuffer that has had years of staying power, was a give away from a doctors convention. Gary, my dad-in-law, used to attend an annual conference to keep his pathology skills up to date. It was always in early December and he would come away with a bag of stuff that we would end up seeing Christmas morning. There were always pens and notepads and various other  items.  Some were useful, others totally silly. However, a drug company gave all the docs one year what was my original sticky note pop up holder. This might have been the beginning of my sticky note addiction.

As we move toward December 25, 2015 I want to take this time to wish each and everyone of you a merry Christmas.  I am grateful for this opportunity to share a piece of my life with you.  Thank you.
